A vazhai leaf, unfurled.
The banana leaf — vazhai ilai — is South India's oldest plate. It cools the meal, blesses the food, and once used, returns to the earth.
When Chef Meenakshi opened Vazhai in 1998, she had one rule: every dish must taste like it was made by someone's grandmother. Twenty-seven years later, that promise is still cooked into every spoonful of sambar.
We grind our own masalas at 5am. We source rice from a co-op in Thanjavur. We serve payasam on a full moon just because our great-grandmothers did.
